With the rise of foodie culture, there are more movies and television shows about the culinary arts than ever before. But perhaps none of them has as ardent a following as the sadly-canceled Hannibal, in which it’s not turkey or ham but the show’s characters who are on the menu. With Thanksgiving just around the corner, we caught up with Hannibal food stylist Janice Poon to talk about her holiday traditions, Mads Mikkelsen’s eating habits and what might be on Hannibal’s table this holiday season.

Bryan Fuller's style is difficult to replicate. Full of detail, sometimes muted by shadows or vibrant with gore, it's easy to recognize his signature on earlier creations such as "Pushing Daisies" and "Dead Like Me." "Hannibal" has resonated the strongest with his fans, though. Fans of Bryan Fuller's Hannibal series (may it rest in peace and hopefully be resurrected one day) witnessed Mads Mikkelsen's titular character indulge in a number of unconventionally delicious dishes, and the show's eclectic menu is now celebrated in Janice Poon's Feeding Hannibal: A Connoisseur’s Cookbook. The first half of Hannibal season three has drawn criticism from some (though not this critic) for its artistic, avant-garde approach to exploring the psychology and relationship between Hannibal Lecter and Will Graham. With “The Great Red Dragon”, the series opens a new chapter, returning to its stylistic roots and introducing a new key figure: Francis Dolarhyde. Fans of Thomas Harris’ work have been eagerly anticipating Dolarhyde’s debut and the start of the show’s Red Dragon arc/adaptation, and after this episode, it’s easy to see why. Being unfamiliar with Hannibal’s source material, this critic can’t speak to the faithfulness of showrunner Bryan Fuller and co.’s take on the character, but the glimpses shown here are certainly compelling.

As we conclude our conversation, James Hawkinson correctly notes that HitFix doesn't do many interviews with cinematographers. While my departing colleague Kris Tapley actually has done a spectacular job interviewing big screen DPs for the site, Hawkinson is almost certainly the first TV cinematographer I've spoken with. If you're going to talk to one TV cinematographer, though, it's hard to think of a better candidate than Hawkinson, who has shot NBC's "Hannibal" since its pilot. No matter what Emmy voters may think, "Hannibal" is currently in its third season as one of the most breathtaking visual spectacles on TV. It's a world of richly saturated colors, subtle gradations of darkness, teasing tricks of focus and the ability to get equal beauty out of a flayed body, a tower of corpses or a dinner composed of succulent preparations of "human" flesh. Sometimes, the behind-the-scenes of a TV show can be a bit pedestrian. Writers write, actors act, directors direct, food stylists create a roast made of human thigh... All right, maybe that last one only applies to Janice Poon, who serves as food stylist on NBC's dark thriller series "Hannibal," created by Bryan Fuller. While Jose Andres serves as the show's culinary consultant, it's Poon, a Toronto-based artist, who came on the show in its first season to take on the challenge of creating the culinary masterworks of chief anti-hero Hannibal Lecter (Mads Mikkelsen). This isn't like making sandwiches to be eaten during takes of "Modern Family," for the record, because for those whose memory of Thomas Harris's gruesome crime novels is hazy, Lecter is a cannibal with refined tastes.
