While arguing with Alma, Hearst asks if he should take his jackknife and turn himself into a capon. A capon is a rooster that has been castrated, to make its flesh more palatable.
Whilst eating peach cobbler and conversing with Aunt Lou, Hearst is seen drinking tea/coffee from his saucer. Hearst is always seen doing this throughout the second and third season. This is a common practice for drinking tea/coffee and is a means of cooling the beverage faster than it would in a cup due to the larger surface area of the saucer and with less liquid in it compared to a cup.
