The ship simulates gravity via rotating sections. Such a set up uses centrifugal force which pushes objects toward the outside of the spinning ring. However, the establishing shots show the agricultural dome facing outwards from the ship, meaning that "gravity" would be pulling them outward towards the dome, rather than towards the flat "floor".
When the habitat areas stop rotating, the inhabitants would not suddenly start to float. Rather, inertia of motion would cause the people and anything not secured in place to continue moving until they smashed into the leading wall.
The ship provides artificial gravity via spinning sections, but there seems to be gravity on the bridge, which the establishing shot shows as being located in the stationary prow of the ship.
When the habitat recommences its rotation, the floating crew all fall straight down as if an artificial gravity field has just been switched on. What would actually happen is they would appear to float to one side as the room moved sideways around them, then only as each person connected with the wall or floor would they begin to move with it and then feel the "centrifugal" force which keeps them stuck to the floor.
When Alicia is talking rapidly during the meal, her American accent falters and the actress' real accent can be heard.
