Sadly, this came out in an era where all the rage was focused on pure fantasy and surrealism, the days where Game of Thrones was the only thing people talked about, and the culminating fandom of the Avengers was all that mattered for most.
As for Sweetbitter, it's just a good TV show, back to basics, and who doesn't love the food and service industry, it had two great concepts working for it. Dialogue is natural and character development was getting so juicy that I feel absolutely robbed of joy by its early cancellation. I can only hope another network/streaming picks this up and all the actors are willing to come back and at least give us a couple more seasons.
